Roasted Broccoli Squash and Onion


The farmer’s market is a beautiful place to be on a warm October Saturday since it may be the last time I get to go for the season.

Winter is heading our way so it’s a great time to put a little extra care into boosting the immune systems, yes?  These vegetables couldn’t be any fresher.

I cut up the following vegetables and placed them on a baking sheet:

1 head of broccoli

3 small yellow squash

2 long sweet peppers

1/2 white onion

I added 2 TBSP Garlic Gold and mixed it with my hands to coat the vegetables. I spread them out evenly and added:

1/4 tsp smoked sea salt

1/4 tsp basil

freshly ground black pepper, to taste

I roasted them in a 425 degree oven for 20 minutes. has organic garlic nuggets in oil – it’s a quick and delicious way to boost the immune system.
