Quick Cucumber Avocado Salad

My wrist is a week and a half past the surgery but today I felt like cooking so the next best thing was to have a sous chef to chop and measure for me. (Thanks, Jack) Now, this left handed girl is typing with my right hand and happy about it all. I’m also happy that Ger took 1st place yesterday in the Men’s Elite Division at FitCon-NC 2015!

I washed and peeled half of the outside of 3 organic cucumbers.

Meal prep for Quick Cucumber Salad from Feeding Ger Sasser

I cut them into coins and put them into a large bowl.

I chopped:

1 large tomato

1/2 white onion

I added them to the bowl, along with:

1/2 tsp dill

1/4 tsp basil

1/4 tsp celery seed (optional – not everyone likes it)

2 TBSP olive oil

3 TBSP balsamic vinegar

1/2 tsp lemon juice

sea salt and freshly ground black pepper, to taste

I stirred, covered with a lid, and put in the fridge for an hour.

Just before serving, add 1 avocado, chopped and fold in gently. (My photo was before the avocado…then we ate it!)
