
This recipe was a big hit at Family Night dinner. The pork chops were tender and delicious and cover with this full-flavored sauce with mushrooms and onion. Ger wasn’t the only one who ate BIG.
I rubbed the inside of my crock pot with 1 TBSP coconut oil..
I added the following ingredients:
6-8 bone-in pork chops (you can use the boneless but I like the flavor from the bones)
1 large container of fresh portobello mushrooms, sliced
1 small red onion, diced
1 TBSP butter
2 cloves garlic (or 1 TBSP Garlic Gold nuggets garlicgold.com)
2 TBSP bone broth (or chicken stock)
1 can organic coconut milk
3-4 TBSP almond flour
2 tsp Cherry Wood Smoked Sea Salt salttraders.com or your favorite smoked sea salt
1/2 tsp basil
1/4 tsp rosemary
freshly ground black pepper, to taste
I put the lid on and cooked this on low for 8 hours. It was just all layered (see the photo, below) and I only stirred it right before we ate it. We had to watch out for the bones but they give this meal such a hearty, deep flavor that it’s worth it.
