Sweet Summer Salad

This salad is quick and easy and way more delicious than you might  think!  I didn’t really measure anything and you won’t have to either.

First I put a small pan of water on to boil, then threw in a large handful of protein rotini and cooked for a minute or two less than the package instructions. (You don’t want the pasta mushy) I strained the water off and stirred the pasta with just a little drizzle of olive oil.

I got out a BIG bowl and put in most of a container of field greens and baby spinach in.

I added:

the cooked protein rotini

1 pear, diced

3 oz blueberries (half a small container)

1 handful of pecans, broken into small pieces

1 small avocado, diced

 

Next, in a small bowl, I stirred up some Ranch, using Ranch powder, sour cream, water, and a little mayo.   I added this to the salad and stirred gently.

You could be ready for a meal right here, but chicken breast, sliced, from Trifecta Nutrition will take this perfect summer meal right over the top!

How easy was that? Now you have more time to go lift something heavy and make some memories – important stuff!
