Easy Instant Pot Sous Vide Eggs

These Instant Pot Soup Vide eggs that mimic the expensive Starbucks version are all the rage. I’ve seen many posts on the Instant Pot Community Facebook page and I’ve made lots of them. The spouse loves to head out the door in the mornings with 2 of them – it’s his preferred breakfast.

I realized in conversation with friends that sometimes people don’t want to make them because they don’t want to clean the blender and then the Instant Pot. I’m here to tell you that I NEVER do that. I don’t put the mixture in the blender at all, and you know what? It doesn’t matter! They come out spectacular anyway. They do. I just blend with a fork or whisk.

I whisk the following ingredients in a bowl:

5 eggs

1/4 cup ricotta or cottage cheese

1/4 cup shredded cheese (mix it up – smoked gouda or cheddar are our favs)

2 TBSP whole milk or heavy cream

1/4 tsp spice (basil or dill or smoked paprika or your favorite)

sea salt and freshly ground black pepper, to taste

 

I spray a silicone baby food mold (got mine on amazon) and then add a little cooked bacon or sausage, or diced red or green sweet pepper into each of the 7 sections.

Next, I pour the mixture on top of the ingredients. They will be almost full – not quite.

I put 1 cup of water in the bottom of the Instant Pot pan and then put the silicone mold on the trivet that came with the Instant Pot.

I set it for Steam 8 minutes with a natural release for 10 minutes.

I unlock and open the lid and take out the silicone mold.

I place a paper plate on top of the silicone mold and then, holding the edges, I quickly flip it over. The 7 beautiful “sous vide” eggs come right out.

I bag them into 3 groups of two in sandwich bags and put them in the fridge.

I eat the last one!
