Turkey and Apple Stuffed Acorn Squash

My sister shared this recipe with me, so I’m sharing it with you all. Super delicious!

Annette’s recipe:

I cut the ends off the acorn squash so would sit flat then cut them in half, scooped out seeds with spoon,  brushed with olive oil, salt & pepper, roasted at 400 on a foil lined baking sheet for about 40-45 minutes.

Chopped up a sweet onion and some celery and sautéd in olive oil and/or bacon fat in skillet on medium until onion was caramelized.

Added one pound of ground turkey, seasoned it with sage, poultry seasoning, salt, pepper, paprika.

When turkey was done I added one chopped apple, sautéd til apple was tender.

Turned down to low and added a handful of shredded mild cheddar cheese.

Stirred to melt cheese.

When squash was done I piled stuffing into each one, added a little more cheese on top and returned to oven for 5 minutes.

Done!
