Roasted Acorn Squash and Carrots with Chipotle Chili Powder

Meal prep is key. When you make an easy plan, you tend to eat better, right? then your health improves.
Perhaps one in ten Americans actually gets enough vegetables in their diet. Why is that so hard? We need to try new things!
I peeled a  2 lb bag of carrots, cut off the ends and cut them into 3 inch pieces.
I cut a small acorn squash into 5 pieces.
 I rubbed them with 1 tsp melted coconut oil and spread them out on a baking pan.
I sprinkled them with:
smoked sea salt
black pepper
chipotle chili powder (a lot)
I roasted them in a 425 degree oven for 30 minutes.
I will be feeding all of this to 6 family members tonight(Cassie is at the beach!) but you can portion them out into containers for other meals.
Easy!
 How many of you have started having a weekly family night dinner? It’s so awesome. You can have friends over and cook for them if you don’t like your family, but I love mine so much.
If you have different games or puzzles or brain teasers, they might stick around longer, too. It’s so much fun to watch them compete with each other in a different format than a WOD.
Here’s Cassie and Ger, a couple of weeks back, playing Quoridor, a 2 or 4 person tile placement game with offense and defense moves. They’d already beat other family members. they look so serious! (Maybe their bellies are full and happy, right?)
