We are deep into a pretty memorable snowstorm. I love this weather. As long as I know all my people are safe off the roads and have heat and food, it’s one of my favorite things. So, let it snow 2+ inches an hour. I am just fine with that. Snow is absolutely beautiful and this one is quite spectacular.
The last post was Paleo Crock Pot Chicken Breast Dinner and I promised to share a great way to use the leftovers that would change it up enough that no one would mind eating it two days in a row.
All I did was to cut a spaghetti squash in half and scoop out the seeds and stringy bits. Then, I placed them cut-side-down in a pan with a half an inch of water. This went into a 400 degree oven for 30-40 minutes, depending the size of the spaghetti squash. (Stick a fork in it)
I flipped the spaghetti squash pieces over and filled them with the leftover Paleo Crock Pot Chicken Breast Dinner and then topped it with avocado.

(I wish I’d sliced the avocado – this pic is funny because the avocado half is so round, and I can’t seem to get full while doing this Whole30 thing. Anyone else feel like that? I hope it gets better after this first week.)
