Perfectly Roasted Potatoes

Sometimes you just don’t want to be 100% paleo, right? Sometimes it’s about the gainz and you’re lifting heavy and you need some of these kinds of carbs. Sometimes, you just long for the perfection of a perfectly roasted potato – in grass-fed butter with rosemary and garlic. So do we!  I bought a bag of baby yukon gold, red, and purple potatoes and also threw in a sweet potato.

I put the following ingredients into a 9 x 12 baking dish:

1  1/2 lbs of organic potatoes, cut into bite-sized pieces

1 large sweet potato, peeled and cut into bite-sized pieces
3 TBSP grass-fed butter, melted
1/2 tsp smoked sea salt
1/4 tsp rosemary
1/2 tsp minced garlic (I used Garlic Gold Nuggets)
freshly ground black pepperI stirred this up to coat the potatoes pieces and then spread them out.
I put them into a 400 degree oven for 30-40 minutes and stirred them once halfway through the roasting time. (Stick a fork in them to see if they are done)
Oh, just yum. Purple, red, gold, and orange yum.
