Roasted Beet Salad

Think about how good for you this salad is. Beets are absolutely magical and they are quite interesting alongside organic cottage cheese. Whenever I roast beets as part of a dinner menu, I like to prep extra for things like this.

I don’t put this salad together ahead of time when I meal prep – I keep the diced beets in a container and make this up each day I’m going to eat it.

I put 1 serving together like this:

1 cup baby spring mix

1/2 cup roasted beets, diced

1/2 cup organic cottage cheese

1/2 tsp olive oil

12 tsp balsamic vinegar

1 tsp sunflower seeds
