Grass Fed Meatloaf with Molasses BBQ Sauce

I put into a large bowl:
3 lbs of grass fed burger. (or venison)
1 egg
1 small organic onion, diced
1/4 cup cassava flour (or almond flour)
1 TBSP Garlic Gold Nuggets ( garlicgold.com ) or minced garlic
1/2 tsp cumin
1 tsp chiplotle chili powder
1 tsp sea salt
freshly ground black pepper

1/2 tsp basil (optional)

I squished this all up with my hands. Then I slid it out into a 9 x 12 pan, covered with aluminum foil. I pushed the meatloaf out into the corners of the pan.

In a small bowl, I made my Paleo BBQ Sauce. I stirred up the following ingredients:
1 can organic tomato paste (Check ingredients – you don’t want any hidden sugar!)
1 TBSP balsamic vinegar
2 TBSP molasses (or honey, if you prefer)
1 tsp coconut oil
1 tsp Garlic Gold Nuggets (or minced garlic)
1 tsp Smoked Paprika
small amount of water or chicken stock, to thin it out a little, but I wanted it pretty thick.

I stirred this up and spread it on top of the entire meatloaf.
I put the meatloaf in a 350 degree oven for 1 hour. (If you use a loaf pan, it may take longer, since it will be thicker. I like using a 9 x 12 pan)

This meatloaf was awesome. We had Balsamic Beets with Goat Cheese and some rainbow quinoa with kale thrown in, along with kombucha, and banana chips at the end.

We played some pages from Lisbeth Darsh’s new book, The FUNctional Fitness Coloring & Activity Book for Adults and we laughed so hard reading over the “Would You Rather” page. Ger and Cassie wrote their choices down and then compared them. Sometimes their choices matched. Sometimes they were surprised that they didn’t match. AND, Let’s just say that NO one wanted to eat a pile of their own vomit… lol. You’ve got to check out this book.
