Ger and Cassie are doing the whole Whole30 so I offered to make sure our family night dinners were compliant. (I’m not starting a Whole30 cycle until I get back from St Pete Monday – I’m sitting at CRW airport right now) So, I decided to do a soup (recipe soon) and salad.
The salad was easy – huge amounts of organic spring mix and baby kale along with red sweet pepper, almond slivers, and sunflower seeds.
I came up with this extremely simple salad dressing using the Vitamix.
Isn’t it pretty? (I hope the Pom glass it’s in doesn’t throw you because it doesn’t have any pomegranate in it) It does contain 8 oz of fresh organic blackberries, because I thought that would be a great way to sweeten it and give it an awesome color.
Great ingredients give you great food!
I put the following things into the Vitamix:
1 8 oz container of fresh organic blackberries
1/4 cup balsamic vinegar
1/4 cup garlic-infused olive oil
1/4 cup water
1/4 tsp Maine Cherry Wood Smoked Sea Salt
freshly ground black pepper
I blended until fairly smooth and thick.
We spooned it on our salads and dug in! Everyone had good things to say about this Blackberry Vinaigrette – the thickness, the tang, and the sweet, so try it soon whether or not you are doing Whole30.
All the kids raced each other with the last round of Search for Santa pages. Competition is a good thing!
