Butternut Squash Quinoa

I want to share with you a recipe from my sister, Annette. We were weekend texting the other day and we sent photos of what we were doing.

Annette’s photo was this colorful, healthy and easy meatless meal she’d just put together. (photo above)

I sent a photo of my first coloring book moment as a grownup, from the Outlander coloring book:

We texted at the same time:  “That’s beautiful!” I was glad she had time to cook something healthy and she was glad to see me relax for a few minutes.

I immediately asked if she made it up and would she want to guest-post and she said yes and that “This is perfect for someone who’s been in a cast (me) or had a little shoulder surgery (Ger) or someone who works too many hours. (Annette)”

So, here’s what she sent me:

“All I did was put:

1 tsp coconut oil

1 tsp butter

…in a big skillet on medium-high heat.

Added 3 cups frozen organic butternut squash;  season with salt and pepper and let cook for about 5-7 minutes until tender.

Reduced heat to medium.

Added 2 big handfuls of fresh organic baby spinach and cooked until starting to wilt, about 2-3 minutes.

Added 1 packet of precooked quinoa (or 1 1/2 cups cooked quinoa) and stirred.

Seasoned with pinches of smoked sea salt and smoked paprika.

It makes 2 servings as a main dish or 4 servings as a side dish.
