Roasted Bone-In Chicken Breast

Jack and I bought  these beautiful bone-in chicken breasts at Central City Meat Market in Huntington. I knew they were going to be tasty! You know I believe that leaving the bone in the meat makes it juicier and tastier. I also like knowing where the meat comes from and buying locally whenever I can.

I rubbed coconut oil in the bottom and sides of an 8 x 8 inch square pan.

I laid 4 bone-in chicken breasts in the pan. (a little overlapping is ok)

I sprinkled each chicken breast with:

thyme

smoked paprika

basil

cherry wood smoked sea salt (or any sea salt but I love Salt Traders)

freshly ground black pepper

I placed 1 TBSP grass fed butter on each chicken breast. (This is what makes the skin all crispy and awesome and keeps the chicken so tender)

I roasted the chicken breasts in a 350 degree oven for 1 hour.

This recipe is totally worth it. So, go find a place to buy some bone-in chicken breasts and talk to the people there. If you’re in my area, check out Central City Meat Market. Then, make some seriously amazing chicken.
