Otto’s Cassava Flour Sausage Balls

I’ve made gluten-free, grain-free Sausage Balls with almond flour for close to 10 years now, but lately I’ve been wanting a new choice. I’d seen some Instagram photos from Ashley Beaver over on LIVINPALEO about using Otto’s Cassava Flour so I ordered some. It was waiting for me when I got back from Las Vegas. I’ve got a list (of course) of ideas to try and I hope some of you take this delicious journey with me!

2 1/2 cups Otto’s Cassava Flour
3 1/2 cups organic cheddar cheese, shredded
1 lb sausage

Mix together.
Form into balls.
Bake 30 minutes or until browned at 350 degrees.

Feel free to spice them up however you like – smoked sea salt, pepper, basil, rosemary, sage, and chipotle chili powder are great choices.  Of course, your sausage may have enough flavor on it’s own.

I’d hoped I could ball them up with my cookie scoop but they needed to be pressed by hand. It still only took a couple of minutes. This recipe made two baking pans full. I bagged up the leftovers in groups of 4-5 to grab as we go out the door in the mornings. (meal prep!)

So far, so good, with the cassava flour! (No weird taste at all and great feel to the baking) Wait until you see what’s next.
