Paleo Garlic Ginger Chicken

Ger PR his split jerk by 25 lbs on Saturday when he and Tom Nay took 2nd at the Voice of America partner games!

I ‘ve been busy with rehab exercises for my wrist several times a day, but I found time to get in the kitchen and make this great new chicken breast recipe.

I took 3 large organic chicken breasts and laid them in a pan.

In a small bowl I stirred up the following ingredients:

2 TBSP local honey

2 TBSP stone ground mustard

1 TBSP water

1 tsp dried ginger (I actually used organic dried ginger from Kombucha Kamp -fresh shredded ginger would work, too, and you might want to use a little more than a tsp)

1 tsp Garlic Gold Nuggets (fresh works, too, but I’m making everything easy lately because of my wrist)

I poured this mixture onto the chicken breasts and added:

1/2 tsp smoked sea salt

freshly ground black pepper, to taste

I baked the chicken for 45 minutes in a 350 degree oven.

It was absolutely delicious and tender. The leftovers are meal prepped for tomorrow’s lunch. I hope you love it, too!
