Wilted Beet Greens

I used to throw away the beet greens when I would make Balsamic Beets with Goat Cheese or Paleo Roasted Beets.  Now we eat them. There’s no reason not to. Waste not, want not, right?

I washed the beet greens from two bunches of beets and cut off the stem.

I put the following ingredients into a skillet:

1 TBSP bacon grease (coconut oil works, too, but the bacon flavor is so good here)

2 TBSP bone broth

1 tsp Garlic Gold Nuggets

Cherry Wood Smoked Sea Salt and freshly ground black pepper, to taste

Over medium heat, I added the beet greens by the hand-full and stirred. As they cooked down, I added more. I did this very quickly, maybe 3-4 minutes.

Next time I make this, I’m going to add spinach leaves.
