Chocolate Ganache Dipped Bacon with Eggs

I love to make bacon in the oven on 400 degrees for around 15 minutes. I love bacon from a local hog off the farm, nice and thick. Some of it takes a little longer.

This idea happened at  my mom’s house. (Ger’s granny) My sister Annette and I met there to see mom and each other – we live 9 hours apart. Annette brought the ganache and strawberries and there was some left. The next morning Granny said, “I’ll make bacon and you can dip it in that chocolate stuff and put it on your blog.” That sounded good! Eggs over medium made that breakfast perfect.

Annette makes ganache like I do: equal parts heavy cream to dark chocolate and a little grass fed butter at the end. This way you can make as much or as little as you might need.

1. Heat cream to almost boil.

2. Remove from heat.

3. Add chopped chocolate (or dark chocolate chips)

4. Let sit, to melt.

5. Stir.

6. Add butter.

7. Stir again.

The better your ingredients, the better your ganache so go for organic whipping cream, the best and darkest chocolate you can find, and grass fed butter. Dip some bacon in it and eat with eggs fresh from the farm. It’s a very special breakfast!
